Get ready to celebrate Cinco de Mayo with some healthy plant-based recipes that everyone can enjoy. Jennifer Coatanroch of La Vie Plenty, will show us how to make three easy to make at home recipes: vegan nachos, enchiladas and a classic margarita! 

Jennifer Coatanroch is a healthy cooking instructor, an ACE Certified Health Coach, and an AFAA Certified Personal Trainer. She has a B.S. in Community Health from WCSU, where she completed her internship at Danbury Hospital assisting the Chief of Pediatric Subspecialties with research into the development of a pediatric obesity clinic.  She worked as a health coach at a private doctors office for five years, and is currently working with special needs children at Wilton Middle School.

Her passion is educating the community on healthy cooking, nutrition and weight management; specifically, the diet's impact on disease and prevention. To find out more about Jennifer, visit her website at www.lavieplenty.com.
